Blue Cod with Thyme and Kalamata Olives

This is probably one of my fav ways to enjoy our fresh blue cod, catched by my hubby with love and all the goodness of the south island seas.





It's simple, clean, full filling and nutritious as it gets.


You will need:


- 4 fillets of blue cod or any other fresh white fish

- Half a lemon (sliced in thin slices)

- 1/4 kalamata olives pitted and chopped

- Thyme ( fresh if possible, couple of little branches)

- 3 tbsp cold press Olive Oil

- Salt and pepper to taste

- Greens for a salad - spinach, lettuce, rocket, kale or others


To prepare it you just need a preheated oven and an oven dish - You may use foil paper or baking paper

Pour in the olive oil and the blue cod and try to get it all rubbed with it. Then place the lemon slices and the blue cod on top. Add the finely chopped kalamata olives and thyme and let it cook for 12 minutes. Check how cooked depending on your oven , I usually do it on the grill and it's done in 10 -12 minutes.


Make the mix of greens and add some clean dressing with olive oil, lemon and mustard dijon and place the blue cod fillets on top.


You may add some more kalamata olives chopped and pepper. Also if olives is not for you, you may replace them with capers.


Enjoy for lunch, dinner as a special occasion to indulge with guests and please do share your picture and results with me.
