Clean Crunchy Garlicky PESTO - for Pesto lovers like myself

Yes I am a pesto lover. Actually a garlic lover - I just love garlic and add it to almost all my recipes.


Garlic is one of those ancient remedies that have so many properties - antibacterial, antifungal, detoxifying and helps with common colds, cholesterol, heart disease and more.

For all these properties to make its best however, garlic needs to be consumed uncooked - as when heated some of its magic is lost in the way.


The clean pesto recipe I am here sharing has varied from season to season and according to fresh green, herbs or vegetables available at home. I invite you to keep an open mind and heart and play with your creativity as you start or continue your journey into clean eating and home cooking.




You will need:


- 1/2 cup of chopped parsley

- 1/2 cup chopped spinach (or kale if your lovely neighbour drops some with an I love you note)

- 1/2 cup cold press olive oil**

- juice of 1 lemon or half depending on how much you like lemon

- 4 cloves of garlic

- 1/2 cup of soaked almonds or cashews or pine nuts

- salt and pepper to taste


Put all greens, choice of nuts and garlic in a blender or your stick mixer container and add olive oil (all at once or dripping it) Then add lemon, salt and pepper and give it another blend. If it's too crunchy or not creamy enough you made add a little bit of water to the mix. Pour it all in a container and take it to the fridge.


Enjoy it on salads, gluten free pasta, as a dip with carrots and celery or with baked fish!


** You can also use avocado oil or half and half avocado and olive oil to give it a smokey taste.
